SOUS VIDE PORK CHOP
This recipe is one that will completely change your way of cooking and eating pork chops. Ingredients for 4
4 bone-in pork rib chops
Kosher salt and freshly ground pepper
4 sprigs thyme or rosemary
2 garlic cloves
2 shallots, thinly sliced
2 tbsp vegetable oil
2 tbsp butter
Instructions
Preheat FIGO to 140 F (60 C).
Season pork chops generously with spices and herbs. Place in sous vide bags, seal, and place pork chops in water bath.
Cook 1-4 hours.
To finish in pan: remove pork chops from water and bags and pat dry with paper towels. Add oil to a cast iron and cook for 45 seconds per side to create a brown and crispy crust.
Serve immediately.
